THE TEMPERATURE MIGHT BE A LITTLE OFF, not might it is. It is hard to get things up to temp if its over 250. Loses a lot of heat when you go inside it obviously. I love it, keep it clean, and I dont see why this wouldnt work for you for years. Change the water every 3 hours like it says. THe chips are 20$ a box, 48 in a box, when smoking it burns 3 an hour. It can heat up without smoking though. I love making my own bacon. If your gonna get this, order the cold smoker adapter as well, an extra 80 bucks. Also buy the cover, take care of it, order an equipment stand from the webstaurantstore.com. I bought a 36 x 30 stand with a shelf underneath, its perfect. Was 175, but you will want a stand that is stainless steel as it can get messy. I love it being digital totally safe to leave unattened for a few hours, no more than 3 though.
