The biggest problem I found with this smoker is maintaining a constant tempature! The first thing you want to do is get rid of the large water pan. Replace it with a small tin or foil pan about the size of one you would cook a meatloaf in. The second thing you want to do is drill between 4 or 5 1/2" in holes in the bottom of the charcoal pan so the ashes fall through. I placed a tin pie pan under the smoker and it caught the ashes just fine. This gives the charcoal and wood plenty of air to burn so that they don't smother in the ashes. Make these simple modifications and voila it will keep a constant tempature and work just fine.

This is an excellent product. Makes cold smoking, or hot smoking extremely easy without dependence on the method of heating in the case of hot smoking. Highly portable, and with a great assortment of smoking woods. This order was to replace a defective item, and was handeled with efficiency on the part of Amazon (very good experience). The only complaint I can make is the lack of a good manual by the manufacturer. They could be more definitive on the operational characteristics of the unit. In all, I am very satisfied with the performance of the smoke generator. I have used it several times since receiving the replacement unit, and coulden't be more satisfied. I'm looking forward to constructing a smoke house according to the plans supplied with the unit, and do not hesitate to recommend this unit to anyone seriously interested in smoking meats, cheese, or fish.
